How To Use

Step-by-step guide to soaking, cleaning and cooking dried or frozen New Zealand sea cucumber for soups, braised dishes, congee and special-occasion banquets at home or in professional kitchens.

How To Use New Zealand Sea Cucumber

Preparation • Cooking • Serving Traditions

New Zealand Sea Cucumber (Australostichopus mollis) is prized across Asia for its gentle flavour, premium texture, and wellness-supporting qualities.

Below is a clear, easy guide to preparing and using our products at home or in a commercial kitchen.

Rehydrating Dried Sea Cucumber

Dried sea cucumber must be rehydrated slowly to achieve its optimal texture — firm on the outside, tender on the inside.

Step 1 — Rinse

Gently rinse each piece under running cold water to remove surface salt.

Step 2 — Soak (24–48 hours)

Place sea cucumbers in a large bowl and soak in fresh, cold water. Replace water every 12 hours.

  • Length of time varies by size
  • Sea cucumbers will gradually soften and expand

Step 3 — Simmer (Clean & Tenderise)

Place softened sea cucumbers into a pot of clean water.
Simmer gently (do not boil rapidly) for 20–30 minutes.
Allow to cool naturally in the water.

Step 4 — Final Clean

Cut open lengthwise and remove internal material if present.
Rinse again in clean water.

Ready to Cook

The rehydrated product can now be used in soups, braises, stir-fries, or wellness dishes.

Using Frozen NZ Sea Cucumber

Our frozen sea cucumber is processed fresh and retains excellent structure and purity.

Preparation:

  • Thaw slowly in the refrigerator overnight
  • Rinse lightly under cold water before use

Once thawed, the product can be cooked immediately and used in the same recipes as rehydrated dried sea cucumber.
